<p>A method for continuously producing partially hydrolyzed starch by simultaneously cold-hydrolyzing and fermenting a crushed raw starchy substrate, wherein the substrate is hydrolyzed in a manner known per se with a sugar-releasing enzymatic preparation, and wherein yeasts are added. The method comprises drawing off the liquor resulting from hydrolysis for 20-60 hours, said liquor containing the solubilized products, and also the unsolubilized products; separating from said liquor everything that has not been solubilized by hydrolysis (in particular the fibres, enzymes and partially hydrolyzed starches) and recycling them; and extracting all or part of the partially hydrolyzed starch before recycling, and stabilizing it.</p> |
