APPARATUS FOR PRODUCING BAKED PRODUCTS

Apparatus for producing baked products comprises an open storage vessel (12) for holding a raw batter (14) in which is a rotatable transcription roller (16) in contact with a larger baking roller (18) thereabove, which has a stationary core (24, Fig 3), of magnetic material surrounded by an electric coil (26), and an outer cylinder (28) mounted on bearings (30,30) at each end. The cylinder may contain voids to hold a heating liquid. A scraper (18a) abuts along the cylinder, beneath a belt conveyor (20). In use, the rollers are driven by motors (22,24), alternating current is passed through the coil 26 and the magnetic flux causes a current to flow in the cylinder 28 which is thereby heated; vaporisation of the heating liquid keeps the surface of the cylinder at a uniform temperature. The surface of the cylinder can be grooved (Fig 5) so that separate strips of product are formed. The apparatus is useful for baking a batter on the surface of the cylinder to form a thin cake or sheet, e.g. for a sponge cake or crepe. Suitable batters are described and are also claimed in EP-A-0191250.
