PURPOSE:To obtain a frozen paste made from the starch devil's tongue having excellent appearance, texture, etc., by blending an aqueous solution of fine powder made from the starch devil's tongue with an aqueous solution of starch and a natural gum component, heating, stirring, adding thick malt syrup, then calcium hydroxide and heating and coagulating. CONSTITUTION:Fine powder made from the starch devil's tongue is dissolved in water to give an aqueous solution, which is mixed with an aqueous solution of starch and a natural gum component, heated, stirred, mixed with thick malt syrup and then with calcium hydroxide, thermally coagulated and further frozen to give the objective frozen paste made from the starch devil's tongue. Locust bean gum is preferable as the natural gum component. |
