PURPOSE:To obtain TSUKUDANI (food boiled down in soy sauce) having excellent shelf stability and flavor by blending TSUKUDANI materials with soy sauce, etc., and psyllium seed gum, boiling down and further adding a specific amount of psyllium seed gum to prepared TSUKUDANI. CONSTITUTION:TSUKUDANI materials comprising marine products, agricultural products and livestock products are blended with soy sauce, sugar, water, optionally thick malt syrup, MISO (fermented soybean paste), chemical seasoning and psyllium seed gum, boiled down and prepared TSUKUDANI is further mixed with 0.05-3wt.% psyllium seed gum to give the objective TSUKUDANI. |
