PURPOSE:To obtain uncooked type instant retort Chinese noodles excellent in all the appearance, flavor and texture. CONSTITUTION:Chinese noodles produced by a conventional method for blending 0.2-1.5% aqueous solution of potassium carbonate with raw material cereal powder are boiled or steamed and then dipped in an acidic aqueous solution so as to afford pH4.5-7.5 of the resultant product after retort sterilization. The resultant noodles are subsequently housed and hermetically sealed in a heat- resistant container to carry out the retort sterilization in a hot-pressing apparatus. |
