A machine for the prepn. of ice cream, milk shakes or sorbet consists of a container for the basic mixture, e.g. ice mix for the preparation of ice cream, and a freezing cylinder with a stirring mechanism. To maintain an exact ratio of compressed air to ice mix, a pump for the injection of ice mix in the cylinder is controlled by a valve in the air supply line. This is kept open or closed as a function of the pressure in the cylinder. A pump driven by a motor, is used to pass the ice mix from the container to the freezing cylinder with the stirring/raking mechanism. The motor is controlled by a pressure monitor which also operates the solenoid valve for the compressed air from the compressor and air receiver.
