PURPOSE:To provide noodles from rice cake having characteristic taste and flavor by blending glutinous rice with flour of nonglutinous rice, further adding a small amount of edible fats and oils to prepare a rice cake and making the rice cake into thin and long ribbons. CONSTITUTION:Glutinous rice is blended with flour of nonglutinous rice in a weight ratio of about 70:30. Then the prepared blended rice as a raw material is mixed with a small amount of edible fats and oils to make a rice cake. Then the prepared rice cake is formed into thin and long ribbon-like raw noodles 1. In using the rice cake noodles, the rice cake noodles are processed into KISHIMEN (flat noodles)-like noodles, several of the rice cake noodles are bundled, folded and fried in a covered state with laver or the rice cake noodles are dried to dry noodles, put in a soup in use, softened and used for food. |
