<p>The assembly is intended for the moulding, draining and salting phases during the mfe. of cheeses. The mould plate is made from a number of plastic moulds stuck together; the mould bases are perforated with 2 mm. holes spaced 5 mm. apart. The counter-mould plate is built up in exactly the same way. The paste is poured into the moulds and the counter-mould plate is fitted over the mould plate. The whey drains through the holes in the bases of the moulds and the assembly is then turned over so that drainage can take place from the other face of the cylinder of paste. The operations can be effected without loss or deterioration and in a very easy manner.</p> |
