PURPOSE:To produce yeast essence having excellent clarity in producing yeast essence by enzymolysis or autodigestion method by treating a yeast cell suspension with a lytic enzyme. CONSTITUTION:A yeast cell suspension with a lytic enzyme is heated to 80-100 deg.C, ribonuclease in the cell is deactivated, the suspension is adjusted to pH 8-11, treated with a cell-wall digesting enzyme and further 5'- phosphodiesterase and 5'-adenylate protease. Or the yeast cell suspension is adjusted to pH 8-11 and 40-60 deg.C and subjected to autodigestion with a cell-wall digesting enzyme. |
