PURPOSE:To produce a material for foods or medicines, especially a material for low-caloric foods by spray-drying a solvent extract from a leaf of Cyclea barbata MIERS, etc., in an ungelled state. CONSTITUTION:A leaf of at least one selected from the group consisting of Cyclea barbata MIERS, Premna divaricata WALL, Mesona procumbens HEMSL and Stephania hernandifolia WALP is extracted with, e.g. water or hot water in the presence of a cation exchange resin capable of removing at least Ca ions and the resultant gelable substance is then spray-dried before gelation thereof. |
