PURPOSE:To obtain a porous block of KONJAK (paste made from the starch of devil's tongue) having excellent seasonability and palatability by gelatinizing a homogeneous aqueous dispersion sol of refined powder of devil's tongue and starch, cutting the gel in the form of strings or thin strips, filling in a mold and freezing in compressed state. CONSTITUTION:The objective food can be prepared by gelatinizing 100 pts.wt. of a homogeneous aqueous sol containing 1 pts.wt. of refined powder of devil's tongue and 3-7 pts.wt. of starch, cutting the gel in the form of strings or thin strips, filling the KONJAK in a mold and freezing in compressed state. |
