PURPOSE:To obtain the title material having low digestion and absorption rate and the same taste and texture as those of ordinary starch simply and in high safety, by blending starch having a specific amylose content with a modifier and an acid and then heat-treating. CONSTITUTION:(A) Starch having 25-60wt.% amylose content is blended with (B) a glycide except D-glucose as a modifier, preferably fatty acid compound and (C) an acid and heat-treated to give the objective material having enzyme digestion ratio with amylase reduced to <=95% unmodified starch. Hydrochloric acid, phosphoric acid, etc., are preferably used as the component C. |
