APPARATUS FOR HEATING AND COOLING FOOD ARTICLES

An apparatus is disclosed for heating or cooling food articles including a chamber (16) containing a plurality of vertically spaced-apart support means (30) for the food articles, each support means (30) having a plurality of spaced apart tubular members (38) connected to first and second plenums (40, 42). Supply and return header means (46, 48) are connected respectively to each first and second plenum (40, 42) of each support means (30) and by conduit (50, 66, 74) to a fluid reservoir (60) and pump (70) to circulate a fluid in a closed loop fluid transfer means through each support means (30). Means (78) for heating and cooling the fluid is also provided and control means (98) for controlling operation of the heating and cooling means (78) individually or in a predetermined sequence and at preselected temperature is also included.
