PURPOSE:To obtain the titled jelly agent having excellent solubility, touch and stability and having a low caloritic value, by adding a fat-soluble vitamin and an organic acid to a jelly base containing pectin and saccharides to prepare an emulsion having a specific pH, molding and drying the emulsion. CONSTITUTION:A fat-soluble vitamin (vitamin A, D, E, etc.) and an organic acid (citric acid, acetic acid, etc.) are added to a jelly base containing pectin and saccharides to prepare an emulsion having pH 2.9-4.0. The emulsion is molded, dried and optionally subjected to sugar coating with mannitol to give the aimed jelly containing fat-soluble vitamin, pectin, organic acid and saccharides. |
