<p>PURPOSE:Fruits of UME (Japanese apricot), after thawed, are sent through all the stages of operations, as they are being contained in a container like a bamboo basket, to prevent the deformation of pulps of UME fruits. CONSTITUTION:Raw UME fruits are stored in a refrigerator till the pulp is completely frozen to the center. Then, the fruits are, without removel of water or fruit juice, directly contained in a container with structure like bamboo basket, i.e., having the structure capable of draining at least at the bottom, where the draining structure may be substituted with porous or mexsh structure and the draining part may be provided on other parts such as sides or the like as well as the bottom. The fruits in the container is thoroughly dipped in a vinegar of an appropriate concentration or in a sodium chloride solution containing acetic acid and the thawing and the seasoning of the frozen fruits are effected simultaneously in the pickling solution. After dipping, the fruits in the container is straight sent to the drying process.</p> |
