PURPOSE:To prepare the subject material resistant to getting sticky by adding a specific amount of EDTA, EGTA, etc., to minced or ground fish meat. CONSTITUTION:The objective material can be prepared by adding 0.2-1wt.% (preferably 0.05-0.5wt.%) of one or more compounds selected from EDTA, EDTA disodium, EGTA, EGTA disodium, oxalic acid, potassium oxalate and sodium oxalate to minced or ground meat of fish such as cod or herring. The addition of the compound is carried out by preparing an aqueous solution of the compound having a concentration of 0.1-1wt.%, adjusting the pH of the solution to 6.8-7.5 with NaOH, etc., putting 1 pt. of minced meat, etc., to 2-20 pts. of the aqueous solution and slowly stirring the mixture for 10-30min. |
