PURPOSE:To provide a highly safe edible ink composition enabling to form beautiful printed products having excellent rapid drying ability, water resistance, luster, etc., by employing a solvent containing an alkyl lactate ester as a main component as a solvent component for the edible ink composition. CONSTITUTION:In an edible ink composition comprising a colorant, a binder and a solvent, a solvent containing an alkyl lactate as a main component is employed. The alkyl lactate ester includes methyl lactate, ethyl lactate, isopropyl lactate and butyl lactate, especially preferably ethyl lactate. The alkyl lactate may be used in a singe state or in a mixture state and may contain any other solvent such as water, an alcohol or a glycol. But when used in a mixture state with the other solvent, it is required to contain the alkyl lactate ester in an amount of >=30wt.% in all the solvents. |
