PURPOSE:To produce a tasty cheese-containing marine paste product mixed with cheese in high ratio without damaging gelatinizing properties of marine product, by blending a marine paste product with cheese in a state wherein the cheese is mixed with a thermally coagulable protein and emulsified under heating. CONSTITUTION:A thermally coagulable protein such as separated soybean protein, wheat gluten, etc., is hydrated with water, mixed with cheese and emulsified to give an emulsion, which is maintained at about 85 deg.C for about 1hr. Then a raw material for a marine paste product in a manufacturing process, such as a raw material ground meat kneaded with salt, is mixed with the heated emulsion, subsidiary raw materials such as starch, MIRIN (sweet SAKE), sugar, etc., and successively heat-treated by a conventional procedure. |
