Process for the extraction of oil from oleaginous products of plants, especially olives, in which the product from the plant is ground in a mill 11 and is then centrifuged in order to separate out the oil, without any additional processing. Separation takes place preferably by means of a three-phase decanting centrifuge 13 in order to separate out the ground pulp, and possible added water, into an oily phase 01, into an aqueous phase W1 and into a cake TS1. As a result, an oil yield is obtained which is considerably superior to that obtained using known cold-pressing processes and which corresponds substantially to the yield obtained using known hot- pressing processes. <IMAGE>
