The equipment comprises a pressing cabinet defining a closed vertical enclosure offering access to the inside and being set out with a vertical stationary framework defining a substantially U-shaped cross-section corresponding to the lateral and rear faces of the cabinet, the base part being fitted out with a tray for catching fluid, and the said stationary framework is set out over some parts of its walls with means 9 allowing stationary trays 10 for supporting moulds (hoops) for receiving cheese to be positioned at variable heights, and in that the said cabinet receives a movable framework acting as a pressing means fitting in and sliding in a controlled and limited manner in the stationary framework while being guided partially by the upper part of this framework, the said movable framework being set out with means 13 for supporting movable trays 15; and in that pairs of stationary and movable trays are thus arranged in the cabinet and allow, by means of the movable trays moving towards the stationary trays supporting the moulds (hoops) and under the pushing action of the complementary means 16 associated with the movable trays, a pressing force to be exerted on the cheeses located in the moulds. <IMAGE>
