PURPOSE:To provide a Bifidobacterium bacterium multiplication-accelerating agent having a high Bifidobacterium bacterium multiplication-accelerating activity, not deteriorating the flavor and taste of a food when utilized for the production of the food stuff having high safety by employing the fruit of a citrus as a raw material. CONSTITUTION:A Bifidobacterium bacterium multiplication-accelerating agent comprises as an active ingredient the whole body of a citrus fruit such as a tangerine, lemon, summer orange or Chinese orange or a part thereof such as ground pericarp dispersed is water, pulverized pericarp, juice or extract produced by extracting the pericarp with warm water, hot water or a polar solvent such as alcohol or acetone. |
