PURPOSE:To obtain a pickled vegetable having good smell in a short time without requiring much labor by adding a salt to cleaned raw material vegetable or cleaned vegetable, subdividing the vegetable into several films or bags, putting the several films or bags into a vessel in a piled state and pickling the vegetable. CONSTITUTION:A salt is added to a sufficiently cleaned raw material vegetable (e.g. chinese cabbage or cucumber), etc., as necessary cut into proper length and the raw material vegetable, etc., containing the salt is subdivided and packed into films or bags made of a permeable raw material (e.g. polyethylene) (at an amount of 50-300g per package) and the packages are put into a container such as tub or barrel in piled state and proper weight is put thereon to pickle the vegetable and opening of the vessel is sealed without re-packing to provide the aimed pickled vegetable. |
