PURPOSE:To prepare a carboxymethyl deriv. of kefiran suitable for a food thickening and stabilizing agent, a gelling agent, etc., by reacting with a halogenated acetic acid in the presence of an alkali in a lower alcohol as a reactive solvent. CONSTITUTION:Kefiran is prepd. by mashing commercially available kefir grains, boiling the mashed, grains dispersed in distilled water and precipitating kefiran by adding ethanol to the supernatent liq. A carboxymethyl deriv. of kefiran is formed by reacting it with a halogenated acetic acid (e.g. chloroacetic acid) in the presence of an alkali (e.g. aq. NaOH soln.) in a lower alcohol (e.g. isopropanol) as a reactive solvent. The reaction product is filtered and suspended in ethanol, etc., and neutralized with acetic acid, etc. Carboxymethyl deriv. of kefiran is prepd. by filtering the solid matter, which is then dried. |
