摘要 |
PURPOSE:To prepare a gelatinized paste product having the taste and flavor of raw meat while preventing the dissipation of large quantity of thermal energy and the decomposition of nutrients by applying high pressure to ground fish meat. CONSTITUTION:The objective gelatinized paste product is prepared by applying high pressure (preferably 3,000-7,000kg/cm<2>) to ground fish meat or a mixture of the ground fish meat and a seasoning or other additives. The ground fish meat is preferably sterilized simultaneous to gelatinization. |
