WHEAT FLOUR COMPOSITION AND PRODUCTION THEREOF

PURPOSE:To obtain a wheat flour composition capable of suppressing or controlling the gluten-formation during the use of the wheat flour by mixing wheat flour with fat and oil having a specific SFI value. CONSTITUTION:The objective composition is produced by mixing 100 pts.wt. of wheat flour with 10-25 pts.wt. (preferably 15-20 pts.wt.) of molten fat and oil having a solid fat index(SFI) value of >=65 (preferably >=68) at 20 deg.C, >=40 (preferably >=50) at 30 deg.C and <=25 (preferably <=21) at 40 deg.C.
