摘要 <p>PURPOSE:To preserve a persimmon fruit over a long period from the harvesting time to the time before the next harvesting time by treating a persimmon fruit with a choline salt before harvest and preserving at a low temperature. CONSTITUTION:A choline salt such as chloride or phosphate is scattered to a persimmon fruit before harvest and the harvested fruit is precooled at a temperature higher than the preservation temperature, preferably at 2-7 deg.C and then preserved over a long period at -0.1 - -2.5 deg.C.</p>
