PURPOSE:To obtain preservatives for flavor ingredient of food capable of stably retaining flavor of food by inhibiting activity of phosphatase which is a catabolic enzyme of nucleic acid based flavor ingredient in a food by fractionating methanol extract of skin of defatted grape by a dialyzing tube. CONSTITUTION:Preservative for flavor ingredient of food having specific physicochemical properties and containing a substance selected from a group consisting of NPF-88BU-1, NPF-88BU-II, NPF-88BU-IA, NPF-88BU-IB, NPF-88BU-IIA and NPF-88BU-IIB. Methanol extract of skin of defatted grape is fractionated by a dialyzing tube to afford NPF-88BU-I as a fraction of 1000-10000 molecular weight and the NPF-88BU-I is fractionated to NPF-88BU-IA and NPF-88BU-IB. In the first fractionation, NPF-88BU-II is obtained as a fraction of >=10000 molecular weight and further fractionated to NPF-88BU-IIA and NPF-88BU-IIB. |
