PURPOSE:To obtain the subject additive, consisting of an endospermic cell wall- nydrolyzing enzyme of rice grains and lecithin and capable of hydrolyzing the endospermic cell walls of the rice grains with the enzyme in cooking rice by addition thereof to polished rice grains and improving the taste of the rice grains. CONSTITUTION:The objective additive consisting of an endospermic cell wall- hydrolyzing enzyme (preferably cellulase) of rice grains and lecithin. Furthermore, the above-mentioned additive is added to a liquid for cooking rice to cook the rice. |
