PURPOSE:To cook a salmon into a steak-lime boiled fish not containing the unique smell thereof and having the enhanced characteristic flavor and taste thereof by boiling a raw salmon or steamed salmon with the soup of onions and further with a seasoning solution. CONSTITUTION:Onions are boiled just before dissolved and the onions in a melted state are removed to give a soup of the onions. The sliced pieces of a raw salmon or steamed salmon or the finely loosed product of the steamed salmon is added to the prepared onion soup and boiled for approximately 10-15min. The boiled salmon is subsequently boiled with a seasoning solution such as an onion soup, standing soy source, reduced sugar, sugar, sweet sake and fermented vinegar for approximately 20-30min. |
