PURPOSE:To obtain a safe solubilized composition having good stability by containing an enzymically treated lecithin as a surfactant derived from natural substances in an oil-in-polyhydric alcohol type solubilized composition. CONSTITUTION:A composition obtained by containing 5-65wt.% polyhydric alcohol, such as glucose, and >=5wt.% lecithin which is a surfactant enzymically treated with a phospholipase, etc., in the whole blend as a solubilized composition applicable to the food field. beta-Carotene, vitamin A, etc., are contained as an oily phase component to afford the objective oil-in-polyhydric alcohol type solubilized composition. The above-mentioned solubilized composition has stability equal to or higher than that of compositions using other surfactants. |
