<p>Whites of eggs are sepd. from the yolks by an appts. comprising a gutter having a double inclination. The ascending portion has the capacity, below the horizontal level, corresp. to the mean content of one egg. The ascending portion is connected to the descending portion by a rounded junction and is provided with lateral openings and a base opening. The openings are in the form of rectangular slits and receive the white of egg flowing down the gutter. The contents of the first egg to be broken are poured into the ascending portion and are removed by the operator if the egg is seen to be defective. In the normal case the arrival of the second egg expels the contents of the first into the descending portion. The second egg remains in the ascending portion until it is recognised as good and is then expelled by the arrival of the third egg and so on. The whites of the eggs flow out through the openings while the yolks slide to the base of the descending portion and are evacuated at the open end of the gutter. Appts. is efficient and performs a partic. useful service; it saves time and can readily be cleaned. It handles small or large quantities of eggs for restaurants, pastry makers, ice cream factories and biscuit makers.</p> |
