The invention relates to the preparation and preservation of boiled sugar intended for the production of artistic and commercial decorations. The product is produced by boiling at 150 or 165 DEG a mixture composed of refined sugar (sucrose), soft water in a proportion of 300 to 400 grammes per kilogramme of sugar and anti-crystallising agents (100 to 200 grammes of glucose and 3 to 5 grammes of cream of tartar). This preparation may be coloured, at the end of the boiling, by the addition of food colours and then not spun or spun. After cooling, the product obtained is cut into rectangular blocks of about 500 grammes and 0.5 to 1 centimetre in thickness. This blocks are packaged in paper bags which withstand a temperature of 250 DEG and then in cooking polyester bags intended to protect them from moisture, permitting a long shelf life. The ready-for-use boiled sugar according to the invention is particularly intended to be used for patisserie, confectionery and bakery products and in catering.
