Food product obtained from fish by-products and, more particularly, from the liver of certain fish, and method for manufacturing it. It is prepared from monkfish livers in a succession of operations including at least one cooking in a terrine (earthenware vessel) or in a cloth, giving the product the texture and the appearance of a poultry-liver terrine, particularly of monkfish livers. |
