PURPOSE:To obtain the title 'konjak' (devil's tongue), a semi-dried product and preservable, moderate in sweetness and pungency, thus useful as a relish for Japanese wine and as a dainty of gourmet taste, by parching thinly stripped 'konjak' etc. alone, seasoning and boiling down followed by drying. CONSTITUTION:A cookpot is charged with thinly stripped 'konjak' or sheetlike-sliced plain 'konjak' followed by parching without any additional ingredients, and the resulting product is flavored with soy sauce and red pepper and spiked with granulated sugar and then boiled down. The resulting product is then lifted, arranged on a dish made of wire net and passed through a drying oven to dry the product to a desired hardness, thus obtaining the objective 'konjak'. It is suggested that said 'konjak' be produced by such an apparatus that the outer periphery of an arch-shaped drying oven 1 is provided with an outer cover 2 made up of a punched board with an air space retained to form a chamber 3 equipped with infrared ray bulbs, and the inner wall of said oven 1 is equipped with respective several infrared bulbs 4 in rows, and the both ends of a frame 5 provided on the both outer sides of the oven 1 in a projected manner are provided with a driving chain wheel 6 and a passively moving chain wheel 7, over which an endless conveyor belt is installed. |
