The invention relates to a method for the industrial manufacture of crisps based on flours (starches) derived from vegetable products and, particularly, from maize or other cereals and a line for implementing it. The method includes the following operations: cooking the raw material, such as the grains of maize and/or other vegetable derivatives containing the flowers (starches) 1, conveyance, by means of a pump, for example, of the mass thus obtained 2, filtration in order to release the excess water 3, grinding of the solid part, if necessary, 4, compacting and extrusion through a flat die of a paste 5, cooking with the aid of a gas/air mixture, microwaves and infrared 6, cutting up before/after cooking the paste 7 and packaging 8. The method and the line for implementing it are intended particularly for the food industry in general, and, in particular, for producing Mexican meals, either individual meals or for large-scale catering, based on maize and/or flours (starches), and diverse starchy foods. <IMAGE> |
