The invention consists of a process which makes it possible to determine if a food product has been subjected to an ionising treatment or not. The principle of the method is to separate and quantify, after lysis of the cells of a product, the high-molecular weight DNA fragments and the lower-molecular weight fragments. This separation is performed by allowing the DNA solution to flow through an appropriate filter. The assay of the DNA retained on the filter as well as of the DNA of the filtrate or of the initial cellular suspension, for example by microfluorimetry, then makes it possible to determine the proportion of DNA retained on the filter and to deduce therefrom if the product has been subjected to a treatment. The invention applies to the detection of food products which have undergone an ionising treatment.
