The invention relates to the means for the purpose of detaching a slice of product from a drive roller onto which it has been pressed, and to the machine provided with these means. These means, which comprise teeth 20 penetrating into the cylindrical casing by engaging into circular grooves hollowed out for this purpose at the periphery of the drive roller 3 so that regardless of its anchorage on the roughnesses 5 of the drive roller 3 it becomes inserted under the slice which has been pressed onto the said cylindrical casing 4 moving it progressively away, are characterised in that the teeth 20 are very short and, like with saw teeth, are carried at the periphery of thin circular collars 23 which, on the one hand, are rotationally moved about an axis parallel to the axis of the drive roller and, on the other hand, are partly engaged in the circular grooves of the drive roller in a part of these grooves located on the side opposite the pad with respect to the point 22 where detachment is desired at the latest, which point is located substantially at the intersection of the cylindrical casings 4, 24 of the drive roller and of the collars 23.
