In known processes, the pyrolysis of the smoking material proceeds on electrically heated pyrolysis plates or in a smouldering funnel, on a friction wheel or by super heated steam, with feed of fresh air to the pyrolysis position for the smouldering effect and for smoke transport. Despite complicated fresh air metering, exothermic reactions occur in the course of this at the pyrolysis temperature which should not exceed 400@C. However, this occurs involuntarily with each air draft. The apparatuses are equipped with complex expensive equipment. The smoking smoke contains, increased as a result, pollutants, and ash dust and soot particles. In the process according to the invention, the pyrolysis of the smoking material proceeds in a vessel by means of direct microwave effect without an air draft coming into contact with the pyrolysis position. Without thermostatic control, the pyrolysis temperature is constantly below 400@C. Smoke transport proceeds in a self-induced manner. The low-pollutant smoking smoke free from contamination is used for the preservation and flavouring of foods such as meat products, sausage products or fish products.
