PURPOSE:To produce a compound sausage free from deterioration or putrefaction of a filler, by filling a desired seasoning or foodstuff, etc., into a body of smoked and heat treated sausage. CONSTITUTION:A body of sausage is smoked and heated according to a conventional method and cooled. Then a long hole part is formed in the core part of sausage using a metal rod, tube, etc., and then a paste form seasoning or a foodstuff correspondingly applied is filled into the inner long hole part and proper wrapping is applied. |
