PURPOSE:To readily obtain instant rice cake having high nutritive value and strongly favorite taste without impairing original flavor, by adding gluten consisting of mucilaginous and pure vegetable protein to a powder of a specific rice cake and sufficiently kneading the blend with an aqueous solution and subjecting the kneaded product to steam heating or high-frequency heating. CONSTITUTION:Gluten consisting of mucilaginous and pure vegetable protein is added to a powder of a specific rice cake (containing glutinous rice flour) and the blend is sufficiently kneaded with an aqueous solution of water, fruit sugar water, milk, etc. and then the kneaded product is subjected to steam heating or high frequency heating to provide the instant rice cake. |
