PURPOSE:To prepare a bottled food having excellent preservability using an inexpensive container, by putting a food into a twist-off-cap bottle, sealing the bottle after deaeration, sterilizing the content with a pressurized thermal sterilization apparatus heated with water bath and cooling the content while keeping the temperature difference between the ambient atmosphere and the content within a specific range. CONSTITUTION:A food is put into a twist-off-cap bottle, deaerated and sealed. The sealed bottle is put into a sterilization chamber of a pressurized thermal sterilization apparatus heated with a water bath. The chamber is heated and pressurized to 100-130 deg.C and 0.5-3atm. (gauge pressure) by introducing hot water and steam into the chamber and the food in the bottle is sterilized by maintaining under the above condition for 3-180min and is cooled while keeping the temperature difference between the ambient environment and the content in the bottle to <=50 deg.C to obtain the objective bottled food. The cooling is preferably carried out by introducing cooling water into the chamber while keeping the pressurized state.
