摘要 PURPOSE:To prepare bean curd stably for a long period compared with the case using an aqueous solution of a coagulant, and economically in view of the operation efficiency, by dissolving glucono delta latcone in hydrated ethanol, and using solution as a coagulant in the conventional process for the preparation of bean curd. CONSTITUTION:Glucone delta lactone is dissolved in a hydrated ethanol having an ethanol concentration of 15-35% to obtain a 20-30% solution. Separately, soaked soybeans are ground in the presence of water at normal temperature, the obtained dispersion is heated at about 100 deg.C for about 5min, and soya milk is separated from bean curd refuse and is coagulated by heating in the presence of the above coagulant composed of the glucone delta lactone solution. The amount of the glucone delta lactone necessary to coagulate the soya milk is 0.2-0.3% based on the soya milk, and about 1ml of a 20-30% solution of glucone delta lactone is added to 100ml of soya milk.
