PURPOSE:To enable sufficient and uniform humidification of whole powder and obtain a noodle dough of good quality, etc., by adding water to humidity flour while flying the flour and continuing the humidification treatment till the middle of the kneading step or thereafter. CONSTITUTION:For example, flour used for forming a dough, such as noodles or breads, is continuously charged into a device in which an agitating rod 1 having blades is rotated at a high speed and humidified with water in a misty state in a humidifier 3. An agitating rod 4 having blades is then normally rotated to carry out humidification treatment while flying the above-mentioned flour so as to knead the flour while humidifying with a shower in a showering device 5. This humidification treatment is continued at least till the middle of the kneading step to completely, homogeneously and mutually blend with water with particles. The afore-mentioned water is preferably sterilized water. |
