PURPOSE:To obtain the titled TOFU useful as a healthy food, having flavor of fruits, improving appetite, by adding acidic fruit juice having specific pH and acidity as a coagulant to soybean milk. CONSTITUTION:Acidic fruit juice having pH2.3-2.9 and 3.5-6.5 acidity and preferably juice obtained from pericarp of the fruit are used as a coagulant and added to soybean milk to give the aimed TOFU. |
