PURPOSE:To permit the production of an target substance by high-density culture in high efficiency, by detecting the acetic acid concentration in the culture mixture, stopping addition of the acid to culture medium when the concentration become higher than prescribed value and allowing the microorganism or mammalian or plant cells to assimilate the acetic acid in the culture medium to keep the acetic acid concentration below a prescribed value. CONSTITUTION:The culture mixture is taken out of the duct 11 into the sample preparation chamber 5. The cell bodies are filtered off and the sample is acidified with an acid and introduced into the unit 6 for determining the concentration of acetic acid. The value of the acetic acid determined with the analyzer 6 is sent to the computer for the process control and compared with the prescribed value. When the concentration is higher than the prescribed one, a signal is sent to the pump 4 to stop the feed of the substrate or flow down the feed rate. On the contrary, when the concentration is lower, a signal is set to the pump 4 to start the feed of the substrate or increase the feed rate.
