The invention relates to the preservation of raw, perishable vegetable foodstuffs in a modified gaseous atmosphere. The method employs a combination of means consisting of the microbiological and physico-chemical stabilisation of the vegetable, an adapted plastic film, an adapted gas, a quantity of gas and a surface of the plastic film selected in relation to the quantity of the vegetable and the procedure for preparing the product: washing, peeling, trimming, even cutting-up; packaging and preservation at a temperature of between + 2 and + 4 DEG C. Application to the preservation of all vegetables or fruits which may be raw, peeled or trimmed, washed, whole or cut up into a suitable shape or grated, in plastic consumer packages, sachets or trays or containers. |
