PURPOSE:To obtain in high productivity a purified locust bean gum with outstanding viscosity of the aqueous solution thereof, by dissolving crude locust bean gum of specified particle size in warm water and filtering said aqueous solution followed by recovering locust beam gum and drying. CONSTITUTION:Crude locust bean gum with particles of <50mum and those of <200mum accounting for <=15wt%, respectively (e.g., ground product in which such impurities as seed coat and embryo bud are left contaminated in extracting albumen from raw material beans) is dissolved in warm water kept at pref. 70-100 deg.C which stirring. The resultant aqueous solution is filtered while keeping normally at >=70 deg.C followed by recovering locust bean gum from the filtered liquor and drying, thus accomplishing the objective purification of the crude locust beam gum. In the dissolution in warm water, 8-15pts.wt. of the crude gum based on 1,000pts.wt. of the warm water is preferably used. The amount of undissolved lump of powder can be decreased, thus reducing the dissolving time leading higher efficiency.
