PURPOSE:To obtain a food without impairing flavor, sense of eating, etc., by the presence of ethanol in a blend of a blend system of an inorganic or organic salt and respectively separating the blend into blend systems containing either one of the amino acid and salt at a high blending ratio. CONSTITUTION:Ethanol is present in a blend of a blend system of an amino acid which is preferably a soy sauce based amino acid, MISO (paste made of fermented soybeans used for preparing soup) based amino acid, acid hydrolyzate of animal or vegetable based proteins, salted fermentation product of animal or vegetable based proteins, etc., with an inorganic or organic salt. e.g. common slat, etc., to separate the blend into a solvent system and precipitate system. The ethanol and water are then recovered from the solvent system to recover a blend of a blend system having a high blending ratio of the amino acid. A blend of a blend system having a high blending ratio of the salt is recovered from the above-mentioned precipitate system. The recovered blends are then added to a food, e.g. TOFU (bean curd), etc., to afford the aimed food without impairing the sense of eating, flavor, etc., even by carrying out freezing, heating, etc. |
