PURPOSE:To obtain gelatin jelly stable irrespective of DE value of starch sugar and starch, by using a gelatin mix having specific three ions all in small amounts as a gelatin mix mainly comprising starch sugar or starch. CONSTITUTION:In producing chewing jelly by jellying a gelatin mainly comprising starch sugar and/or starch, a gelatin mix having sulfate ion, sodium ion and potassium all in small amounts is used as the gelatin mix. Namely, neither gelatin treated with sulfuric acid nor gelatin treated with an alkali containing sodium ion or potassium ion is used. |
