In a method of peeling beans they are first passed through a preliminary damp heat treatment, then peeled in a wet condition, dried preferably in a heat drying apparatus and subjected to a second peeling. The heat treatment may be carried out by treating with wet steam or by emptying the untreated beans into boiling soft water mixed, if necessary, with alkali carbonate, leaving for 10-20 minutes in the water until the hull becomes wrinkled and suddenly cooling by cold tap water. The peeling may be done in any apparatus known, per se, e.g. between rapidly rotating elastic rollers. |
